This show stopper is braided with love in a style typical to Emilia-Romagna. These tortelli are filled with creamy ricotta cheese and wild nettles that Rachael foraged for earlier this week. Nettles are an extremely nutritious wild green that has been eaten and used medicinally for thousands of years. We celebrate nettles as a treasure native to this land and the first wild green of spring.
