A pullet egg is an egg from a chicken that is less than one year old. In the first month of their egg laying life, these young hens lay smaller but extra-rich eggs. These pullet eggs are not marketable to the grocery industry due to their size but are an amazing seasonal treat sought out by chefs and farmers. The rich yolk are placed in a nest of ricotta and spinach then the pasta is shaped by hand into beautiful raviolo. One order comes with 4 raviolo with a suggested serving size of 2.
