Our own blend of Bakersfield Einkorn ancient grain wheat and organic semolina flour make this extruded Gemelli. Einkorn is higher in protein than modern wheat and is one of the first grains cultivated and eaten more than 12,000 years ago. The name "Gemelli" is derived from the Italian word for "twins" and you can see why with it's perfect sauce-catching twist. Rachael and her sister Amy are twins, making this shape perfect for Cornelius Pasta Co.
