Made to look like cockscombs, this is macaroni perfected (gemelli pictured for packaging reference). A Medici family myth claims they were saved by the family roosters screeching as assassins snuck through the barn. In celebration, they made this pasta and now you too can have a pasta celebration. Made with our own blend of Bakersfield Einkorn ancient grain wheat and semolina flour. Einkorn is higher in protein than modern wheat and is one of the first grains cultivated and eaten more than 12,000 years ago. We just love Creste de Gallo in pasta salad or in fancy mac-n-chz.
