Bison Brisket Bolognese

Our bolognese is an upper-midwest version of the traditional meat sauce. We use grass-fed bison that graze until field-harvested fromĀ  Northstar Bison in Cameron, WI. Northstar Bison uses regenerative ranching, raise and process the best bison around. The flavorful brisket is browned with a small amount of bison liver to fortify this bolognese. Then, the brodo is added and it all simmers for hours until it comes together as a perfect sauce for pasta. Try it with the Tagliatelle
