Beet Ravioli

Beet dough shaped into beautiful pointed star ravioli. These ravioli are filled with Donnay Chevre, a delicious farmstead goat cheese from Kimball MN. We froze some wild plums last fall that we are using to add brightness alongside cherries and anise hyssop from last fall's harvest. Great with butter sauces, the ravioli are that touch of brightness preserved from last year that we all need during this cold winter.
