Our Story

Our Story

Where It All Began

Cornelius Pasta Co. is where you can find Rachael Cornelius McLeod’s fresh pasta. While you may have enjoyed her food for many years, Cornelius Pasta Co. was founded in 2020 with fresh pasta made to order. Whether you have followed Rachael from the early days at Gnocchi.Me in the Northeast Minneapolis Farmer’s Market, or enjoyed the Rachael’s Pasta brewery pop-ups, you know her talent. Rachael learned from some amazing chefs through the years at Chowgirls in Minneapolis, Rare in Fort Collins, then truly honing her craft running the pasta program at the long lived Harvest in Louisville. At Harvest, Rachael was able to work with amazing fresh and foraged ingredients while still finding time for a collaborative pasta dinner series with the chef team at 610 Magnolia. Now her pasta is available for you to enjoy at home!

About Our Pasta

Cornelius Pasta Co. specializes in fresh hand-made pasta. Each shape is made from heritage and ancient grain flour locally milled to order, producing the best flavor and texture. We make a variety of traditional shapes and sauces, specials made with seasonal upper-midwest flavors, and original combinations inspired by our experiences traveling. We celebrate our region by foraging for wild and seasonal delicacies used in our pastas and sauces. Due to the love and care that goes into each handmade shape, there are always limited quantities available. 

Fresh pasta needs to be kept refrigerated. It is best enjoyed the day of purchasing or frozen immediately to be cooked directly from frozen for future pasta enjoyment.
