CAPRESE RAVIOLI is back! For the third year in a row we are combining a classic flavor combo into a stunning rav. This year the ravioli is half green and half red, the top and bottom of the rav is a different color. The CAPRESE RAVIOLI is filled with fresh-pulled mozzarella, heirloom tomatoes and garden basil. Rachael pulls the mozzarella in-house so prepare for some epic cheese pulls. The local heirloom tomatoes are roasted to concentrate that sweet and umami combo we all love as tomato season. Heirloom tomatoes themselves haven’t been hybridized for shipping so they have the purest, most decadent summer tomato flavor that we wait for all year. A favorite of many with our POMODORO, NORMA, and also delicious with BROWN BUTTER.
Last call on the GRILLED CORN RAVIOLI! It has sold out 2 weeks in a row so swoop em up early. This GRILLED CORN RAVIOLI is filled with local sweet corn. The UNTIEDT”S FARM sweet corn gets grilled over charcoal and wood. Rachael mixes the corn with SARTORI SARVECCHIO parmesan cheese and house-made ricotta cheese. This ravioli is already such a crowd pleaser why not make it a stunning circle rav with stripes to pop? The RED BEET CAMPANELLE is here for the duration. This bright red Campenelle is colored with local beets and is one of our favorite colored pastas. We love to use everything we can and the nutrition and beauty of the farmers market beets are unmistakable. We juice the beets to extrude with our own blend of Bakersfield Red Fife heritage wheat and semolina flour.
